I think that there is so much variability in Brassica oleracea because the plant has been around for a long time and it has adapted to love in certain areas of the world and that causes it to be different colors and they look different too.Over the years some of the brassica has probley experienced cross pollination.Scientist have genetically engineered some species of plants to look a certain way and that has carried on.The plants also undergo selective breeding which causes them to breed with certain plants and they cmd out looking different with different traits.
